Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus more for dusting
- ½ cup (100g) granulated sugar
- ½ teaspoon salt
- ¾ cup (1 ½ sticks / 170g) unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons (30ml) cold water
- 4 medium apples (about 2 lbs/900g), peeled, cored, and diced (Granny Smith, Honeycrisp, or Gala work well)
- ¼ cup (50g) granulated sugar
- 2 tablespoons (30ml) lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons (30ml) all-purpose flour
- ½ cup (60g) all-purpose flour
- ½ cup (50g) rolled oats (not instant)
- ⅓ cup (67g) packed light brown sugar
- ¼ teaspoon salt
- ½ cup (1 stick / 113g) unsalted butter, cold and cubed
Instructions:
- Line the 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.
- Combine flour, sugar, and salt in a bowl or food processor. Cut in the cold butter until the mixture resembles coarse crumbs. Add the egg yolk and water; mix until just combined. Press the dough evenly into the prepared pan. Chill for 15 minutes. Bake at 350°F (175°C) for 12-15 minutes, or until lightly golden.
- Combine diced apples, sugar, lemon juice, cinnamon, nutmeg, and flour in a large bowl. Stir to combine.
- Combine flour, oats, brown sugar, and salt in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
- Spread the apple filling evenly over the pre-baked crust. Sprinkle the crumble topping evenly over the apple filling. Bake at 350°F (175°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars.
