Ingredients:

  • ½ cup (60g) all-purpose flour
  • ⅓ cup (67g) packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup (57g) unsalted butter, softened
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ½ cup (113g) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) milk
  • 1 ½ cups (approx. 2 medium) peeled, cored, and diced apples

Instructions:

  1. Preheat oven to 180°C (350°F). Line muffin tin with paper liners or grease well.
  2. Combine flour, brown sugar, and cinnamon in a small bowl. Cut in softened butter with a fork until mixture resembles coarse crumbs. Set aside.
  3. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
  4. In a separate bowl, mix granulated sugar, brown sugar, melted butter, eggs, vanilla, and milk until well combined.
  5. Gradually add dry ingredients to wet ingredients, stirring until just combined. Avoid overmixing.
  6. Gently fold in the diced apples.
  7. Divide batter evenly among muffin cups, filling each about ¾ full.
  8. Sprinkle crumb topping generously over each muffin.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
