Ingredients:
- ½ cup (60g) all-purpose flour
- ⅓ cup (67g) packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ cup (57g) unsalted butter, softened
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup (100g) granulated sugar
- ¼ cup (50g) packed light brown sugar
- ½ cup (113g) unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120ml) milk
- 1 ½ cups (approx. 2 medium) peeled, cored, and diced apples
Instructions:
- Preheat oven to 180°C (350°F). Line muffin tin with paper liners or grease well.
- Combine flour, brown sugar, and cinnamon in a small bowl. Cut in softened butter with a fork until mixture resembles coarse crumbs. Set aside.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
- In a separate bowl, mix granulated sugar, brown sugar, melted butter, eggs, vanilla, and milk until well combined.
- Gradually add dry ingredients to wet ingredients, stirring until just combined. Avoid overmixing.
- Gently fold in the diced apples.
- Divide batter evenly among muffin cups, filling each about ¾ full.
- Sprinkle crumb topping generously over each muffin.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
