Ingredients:

  • 2 medium zucchini (about 500g / 1.1 lb), ends trimmed
  • 1/2 cup (60g / 2.1 oz) all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup (100g / 3.5 oz) panko breadcrumbs
  • 1/2 cup (50g / 1.75 oz) grated Parmesan cheese, finely grated
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for drizzling
  • 1/2 cup (120ml / 4 fl oz) mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 tsp smoked paprika

Instructions:

  1. Slice the zucchini into 1/2-inch thick fries (about finger-sized).
  2. Place the flour in the first bowl, beaten eggs in the second, and panko breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper in the third bowl. Mix the panko mixture well.
  3. Dredge each zucchini fry in the flour, then dip in the egg, and finally coat well with the panko-parmesan mixture. Ensure each fry is evenly coated.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  5. Arrange the zucchini fries in a single layer in the air fryer basket. Don't overcrowd! Drizzle with olive oil. Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  6. While the zucchini fries are cooking, whisk together the mayonnaise, minced garlic, lemon juice, olive oil, salt, black pepper, and smoked paprika in a small bowl until well combined.
  7. Serve the hot zucchini fries immediately with the garlic aioli for dipping.
