Ingredients:

  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 2 cloves garlic, finely minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 lb flank steak, sliced thin against the grain
  • 2 large bell peppers, sliced into 1/2-inch strips
  • 1 large red onion, sliced into half-moons
  • 1 tbsp neutral oil
  • 8 small flour tortillas

Instructions:

  1. In a large mixing bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Add the sliced steak and toss to coat. Marinate for at least 15 minutes.
  2. Preheat the air fryer to 400°F (200°C). In a separate bowl, toss the sliced bell peppers and red onion with 1 tablespoon of neutral oil.
  3. Place the vegetables in the air fryer basket in an even layer. Lay the marinated steak strips directly on top of the vegetables.
  4. Air fry for 8–10 minutes, tossing the ingredients halfway through with tongs to ensure even browning and to prevent the steak from steaming.
  5. Remove the steak and vegetables once the steak reaches 135°F (57°C). Let the mixture rest for 3 minutes before serving in warm tortillas.
