Ingredients:

  • 1 pound (454g) large shrimp, peeled and deveined
  • 2 tablespoons (30ml) olive oil
  • 3 cloves garlic, minced
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tablespoon (10g) grated Romano cheese (optional)
  • 1 tablespoon (8g) all-purpose flour
  • 1/2 teaspoon (2.5ml) garlic powder
  • 1/4 teaspoon (1.25ml) red pepper flakes (optional)
  • 1/4 teaspoon (1.5g) salt
  • 1/8 teaspoon (0.75g) black pepper
  • 1 tablespoon fresh parsley, chopped
  • Lemon wedges, for serving

Instructions:

  1. Pat the shrimp dry with paper towels to help them crisp up.
  2. Gently warm the olive oil and minced garlic in a small bowl (microwave 30 seconds or gently heat on the stovetop). Don't burn the garlic!
  3. In a medium bowl, combine the shrimp, garlic oil, Parmesan cheese, Romano cheese (if using), flour, garlic powder, red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
  4. Arrange the shrimp in a single layer in the air fryer basket, ensuring they aren't overcrowded. You may need to cook in batches.
  5. Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway through, until the shrimp are pink and opaque and the parmesan crust is golden brown.
  6. Garnish with fresh parsley and serve immediately with lemon wedges.
