Ingredients:

  • 3 cups (270g) rolled oats (old-fashioned, not instant)
  • 1 cup (120g) mixed nuts (almonds, walnuts, pecans – roughly chopped)
  • ½ cup (60g) mixed seeds (pumpkin, sunflower, chia, flax)
  • ¼ cup (60ml) maple syrup (or honey)
  • ¼ cup (60ml) coconut oil (melted)
  • 1 teaspoon (5ml) vanilla extract
  • ½ teaspoon (2.5ml) ground cinnamon
  • Pinch of sea salt

Instructions:

  1. Preheat the air fryer to 300°F (150°C). Line the air fryer basket with parchment paper (optional).
  2. In a large bowl, combine the rolled oats, nuts, seeds, cinnamon, and salt.
  3. In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir well until evenly coated.
  5. Spread the granola mixture in a single layer in the air fryer basket. Cook for 5-7 minutes, then shake the basket and cook for another 5-7 minutes, or until golden brown and fragrant.
  6. Let the granola cool completely in the air fryer basket. This will help it crisp up. Store in an airtight container at room temperature for up to 2 weeks.
