Ingredients:
- 3 cups (270g) rolled oats (old-fashioned, not instant)
- 1 cup (120g) mixed nuts (almonds, walnuts, pecans – roughly chopped)
- ½ cup (60g) mixed seeds (pumpkin, sunflower, chia, flax)
- ¼ cup (60ml) maple syrup (or honey)
- ¼ cup (60ml) coconut oil (melted)
- 1 teaspoon (5ml) vanilla extract
- ½ teaspoon (2.5ml) ground cinnamon
- Pinch of sea salt
Instructions:
- Preheat the air fryer to 300°F (150°C). Line the air fryer basket with parchment paper (optional).
- In a large bowl, combine the rolled oats, nuts, seeds, cinnamon, and salt.
- In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir well until evenly coated.
- Spread the granola mixture in a single layer in the air fryer basket. Cook for 5-7 minutes, then shake the basket and cook for another 5-7 minutes, or until golden brown and fragrant.
- Let the granola cool completely in the air fryer basket. This will help it crisp up. Store in an airtight container at room temperature for up to 2 weeks.
