Ingredients:

  • 2 cups (170g) Rolled Oats
  • 1/2 cup (50g) Chopped Nuts
  • 1/4 cup (20g) Unsweetened Cocoa Powder
  • 1/4 teaspoon (1g) Salt
  • 1/4 cup (60ml) Maple Syrup
  • 2 tablespoons (30ml) Coconut Oil
  • 1 teaspoon (5ml) Vanilla Extract
  • 1/2 cup (85g) Chocolate Chunks

Instructions:

  1. Preheat your air fryer to 320°F (160°C).
  2. In a large bowl, combine the rolled oats, chopped nuts, cocoa powder, and salt. Whisk together.
  3. In the same bowl, add the maple syrup, melted coconut oil, and vanilla extract. Stir until all the dry ingredients are evenly coated.
  4. Gently fold in the chocolate chunks.
  5. Line the air fryer basket with parchment paper. Spread half of the granola mixture in a single layer in the basket.
  6. Air fry for 5-7 minutes, shaking the basket halfway through, until the granola is lightly golden brown and fragrant.
  7. Remove the cooked granola from the air fryer and transfer it to a baking sheet or large plate to cool. Repeat steps 5 and 6 with the remaining granola mixture.
  8. Let the granola cool completely before storing it. This will allow it to crisp up.
  9. Store the cooled granola in an airtight container at room temperature for up to a week.
