Ingredients:
- 2 cups (170g) Rolled Oats
- 1/2 cup (50g) Chopped Nuts
- 1/4 cup (20g) Unsweetened Cocoa Powder
- 1/4 teaspoon (1g) Salt
- 1/4 cup (60ml) Maple Syrup
- 2 tablespoons (30ml) Coconut Oil
- 1 teaspoon (5ml) Vanilla Extract
- 1/2 cup (85g) Chocolate Chunks
Instructions:
- Preheat your air fryer to 320°F (160°C).
- In a large bowl, combine the rolled oats, chopped nuts, cocoa powder, and salt. Whisk together.
- In the same bowl, add the maple syrup, melted coconut oil, and vanilla extract. Stir until all the dry ingredients are evenly coated.
- Gently fold in the chocolate chunks.
- Line the air fryer basket with parchment paper. Spread half of the granola mixture in a single layer in the basket.
- Air fry for 5-7 minutes, shaking the basket halfway through, until the granola is lightly golden brown and fragrant.
- Remove the cooked granola from the air fryer and transfer it to a baking sheet or large plate to cool. Repeat steps 5 and 6 with the remaining granola mixture.
- Let the granola cool completely before storing it. This will allow it to crisp up.
- Store the cooled granola in an airtight container at room temperature for up to a week.
