Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- 1/2 teaspoon salt (2.5 ml)
- 1/4 teaspoon black pepper (1.25 ml)
- 1/2 cup all-purpose flour (60g)
- 2 large eggs, beaten
- 1 cup Italian seasoned breadcrumbs (100g)
- 1/4 cup grated Parmesan cheese (25g)
- 2 tablespoons olive oil (30 ml)
- Cooking spray
- 1 1/2 cups marinara sauce (355ml) (Good quality, store-bought or homemade)
- 8 oz fresh mozzarella cheese, sliced (225g)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Pound chicken breasts to an even thickness (about 1/2 inch). Season with salt and pepper.
- Place flour in one dish, beaten eggs in another, and breadcrumbs mixed with Parmesan cheese in the third.
- Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumb mixture. Press the breadcrumbs gently to adhere.
- Preheat air fryer to 375°F (190°C).
- Spray the air fryer basket with cooking spray. Place chicken breasts in the basket in a single layer (work in batches if necessary). Drizzle with olive oil.
- Air fry for 8-10 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
- Top each chicken breast with marinara sauce and mozzarella slices.
- Return to air fryer for 2-3 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil (if using) and serve immediately.
