Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each)
  • 1/2 teaspoon salt (2.5 ml)
  • 1/4 teaspoon black pepper (1.25 ml)
  • 1/2 cup all-purpose flour (60g)
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs (100g)
  • 1/4 cup grated Parmesan cheese (25g)
  • 2 tablespoons olive oil (30 ml)
  • Cooking spray
  • 1 1/2 cups marinara sauce (355ml) (Good quality, store-bought or homemade)
  • 8 oz fresh mozzarella cheese, sliced (225g)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Pound chicken breasts to an even thickness (about 1/2 inch). Season with salt and pepper.
  2. Place flour in one dish, beaten eggs in another, and breadcrumbs mixed with Parmesan cheese in the third.
  3. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumb mixture. Press the breadcrumbs gently to adhere.
  4. Preheat air fryer to 375°F (190°C).
  5. Spray the air fryer basket with cooking spray. Place chicken breasts in the basket in a single layer (work in batches if necessary). Drizzle with olive oil.
  6. Air fry for 8-10 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
  7. Top each chicken breast with marinara sauce and mozzarella slices.
  8. Return to air fryer for 2-3 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh basil (if using) and serve immediately.
