Ingredients:
- 1/4 cup ripe banana, mashed (about 60g)
- 1 Tbsp unsalted butter, melted (or neutral oil)
- 1 Tbsp large egg, lightly whisked (or 1 Tbsp milk/yogurt)
- 1/4 tsp vanilla extract
- 1 to 2 Tbsp granulated sugar (or brown sugar)
- 3 Tbsp all-purpose flour (45g)
- 1/4 tsp baking powder
- Pinch ground cinnamon (optional)
- Pinch salt
- 1 Tbsp chocolate chips or chopped nuts (optional)
Instructions:
- Prepare the Banana Base: Place the peeled, ripe banana into the microwave-safe mug. Mash thoroughly until smooth. Add the melted butter (or oil) and the vanilla extract. Stir in the measured egg (or milk alternative) until well combined.
- Combine Dry Ingredients: Sprinkle the sugar, flour, baking powder, cinnamon, and salt directly on top of the wet mixture in the mug. Gently fold and stir the mixture until the dry ingredients are just incorporated. Avoid overmixing.
- Cook the Muffin: Ensure the mixture is distributed evenly in the base of the mug. Place the mug into the microwave and cook on high power for 60 to 90 seconds (1 minute to 1 minute 30 seconds).
- Check for Doneness and Rest: The Banana Bread Mug Muffin should be puffed up and set. If the surface looks wet, return to the microwave for 10–15 second intervals. Carefully remove the hot mug and allow the muffin to rest for 1–2 minutes before eating.
