Ingredients:
- 1 lb lean ground chicken (90/10 blend)
- 0.5 cup Italian seasoned breadcrumbs
- 0.5 cup marinara sauce
- 4 slices mozzarella cheese (approx. 4 oz)
- 4 brioche or ciabatta buns
- 1 tbsp olive oil
- 1 pinch salt
- 1 pinch black pepper
Instructions:
- In a large mixing bowl, combine the ground chicken and Italian breadcrumbs. Gently mix until just combined—do not overwork the meat. Divide into 4 equal portions and shape into patties about 3/4 inch thick.
- Use your thumb to make a slight indentation in the center of each patty to ensure even cooking and prevent puffing.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Place the patties in the pan and sear for 5–6 minutes until a golden-brown crust forms.
- Flip the burgers. Immediately spoon 2 tablespoons of marinara sauce over each patty and top with a slice of mozzarella cheese.
- Cover the skillet with a lid for the final 4–5 minutes of cooking to melt the cheese and ensure the chicken reaches an internal temperature of 165°F (74°C).
- Lightly toast the buns. Place the chicken patties on the bottom buns, add extra marinara if desired, and top with the other half of the bun.
