Ingredients:

  • 3 large overripe bananas (approximately 354g)
  • 1 box (15.25 oz) sugar-free yellow cake mix
  • 2 large eggs
  • 0.5 cup dark chocolate chips (70% cacao)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper for easy removal.
  2. In a large mixing bowl, peel and mash the 3 large bananas using a fork or potato masher until mostly smooth with minor lumps.
  3. Add the 2 large eggs to the banana mash and whisk until thoroughly emulsified.
  4. Gently fold in the cake mix using a silicone spatula. Stop mixing as soon as the last streak of dry powder disappears to avoid a tough texture.
  5. Fold in 3/4 of the dark chocolate chips into the batter, then pour the mixture into the prepared loaf pan.
  6. Sprinkle the remaining chocolate chips on top of the batter.
  7. Bake for 45 minutes. For a standard 9x5 loaf, check for an internal temperature between 93°C - 96°C. Alternatively, a toothpick inserted into the center should come out clean.
