Ingredients:
- 3 large overripe bananas (approximately 354g)
- 1 box (15.25 oz) sugar-free yellow cake mix
- 2 large eggs
- 0.5 cup dark chocolate chips (70% cacao)
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper for easy removal.
- In a large mixing bowl, peel and mash the 3 large bananas using a fork or potato masher until mostly smooth with minor lumps.
- Add the 2 large eggs to the banana mash and whisk until thoroughly emulsified.
- Gently fold in the cake mix using a silicone spatula. Stop mixing as soon as the last streak of dry powder disappears to avoid a tough texture.
- Fold in 3/4 of the dark chocolate chips into the batter, then pour the mixture into the prepared loaf pan.
- Sprinkle the remaining chocolate chips on top of the batter.
- Bake for 45 minutes. For a standard 9x5 loaf, check for an internal temperature between 93°C - 96°C. Alternatively, a toothpick inserted into the center should come out clean.
